Nicholeen’s Best Ever Gluten Free Brownies

When we take these gluten free brownies to parties everyone begs for the recipe. They are always so surprised when they find out that I make them gluten free. Even my husband, who doesn’t prefer gluten free, LOVES these. If you don’t cook gluten free, there is a non-gluten version as well.

Best Ever Brownies! Gluten Free by: Nicholeen Peck

Recipe makes a 9×13 pan (If we double it, we put it in a jelly roll pan)

Pre-heat oven to 350 Degrees. Grease a 9 x 13 pan.

In a sauce pan melt 1 Cup butter or margarine

After melted add 1/2 Cup cocoa or 4 squares baking chocolate

Remove from heat and add 2 cups sugar

Then add 4 eggs stirring one in at a time until blended.

Next add 1 tsp vanilla

1/2 Cup Rice Flour

1/2 Cup Tapioca Starch

1/2 Cup Corn Starch

(may substitute other healthier flours and even coconut oil for butter, but this may alter taste or texture) For non-gluten free you can just use regular 1 1/2 Cups flour and omit the xantham gum.

1 tsp Xantham Gum

1/2 tsp salt

Nuts optional (most of the time I don’t use nuts)

Bake in heated oven for 30 minutes. Do not overbake.

After the brownies have cooled apply this icing.

Icing:

3 Cups powdered sugar

1/4 Cup Margarine or Butter

1/4 Cup Cocoa

1 egg or 3 TBL water

3 TBL hot milk

Mix together then frost.

We usually add sprinkles to the top of the frosting too. Yummy!
