During this time of year, one of my favorite things to do is to harvest all the produce that I grow on my half-acre of land. I find so much joy in working in the yard and getting my hands dirty with a work of love. After I harvest all of my food, my next task is to preserve it, so as to be enjoyed later. But why is harvesting and canning so important? A friend asked me once why I took the time and spent the money to preserve the food. She stated, “Wouldn’t it be easier and cheaper just to buy it? Why take the time and effort to can it all?” I thought, “Is she right?” But then I started thinking and realized that I do this for more than just the food.There are quite a few reasons why I harvest and can my crops.
